For centuries, the Itrana olive from Lazio has for years been known as the “Gaeta Olive” due to the port of Gaeta being the main exporting hub for this phenomenal product. The majority of its production remains around Itri in the Pontine Plain where the lulling hills enjoy the warm sea breeze from only a few kilometres away. These exquisite little olives are unique for their unusual rose-coloured hue, their soft consistency and their flavour, which is intense and persistent. To maintain their unmistakable flavour they are placed in brine straight after harvesting. Delicious on their own or with any dish, they are also excellent to add to all types of sauce, in particular to “Puttanesca” sauce on your pasta.
