The "Helix Pomatia", the most famous of the culinary snails for their firmer bite, can be found in the East of France and in Central Europe and are only collected, in France, as of July 1st of each year. This breed of snail cannot be farmed and the majority are imported from their natural environments in Eastern Europe. The name "Bourgogne" comes from the local traditional recipe in which they are typically served: with garlic and parsley.
