This is Gerini's 800g version of a classic Tuscan salami. Made from finely minced premium lean pork cuts (including shoulder, pork belly, and ham trimmings), it also contains diced pork lard and is seasoned with spices before undergoing a slow maturation process. The distinctive flavour is achieved through hand-strung processing at their facility in Pontassieve, near Florence. Possibly the leanest of salamis, the Toscano is best enjoyed sliced and served in the traditional manner with bread, but it also pairs excellently with fruit, such as figs during the summer months.
