Semi-hard Pecorino flavoured in Elba Aleatico Passito Wine DOCG, made with pasteurised sheep's milk and animal rennet. After an initial 70-day maturation, the cheese is covered in grape marc (the solid remains of grapes after pressing for juice and fermentation that includes the skins, seeds, and stems) for further refinement of at least 40 days, allowing it to absorb Aleatico flavours of cherries in syrup, plums, and spicy notes of cinnamon and cloves.
